INGREDIENTS
1/3 cup of mayonnaise.
A quarter cup of grated Parmesan cheese.
Six slices of toasted bread.
Six large eggs.
Kosher salt and freshly ground pepper as seasonings for taste.
An adequate amount of hot sauce which is optional.
DIRECTIONS
Place the mayonnaise and cheese in a medium mixing bowl and stir to combine. Spread the mayo mixture equally on each bread toast then use a knife to make holes on each bread toast.
Place a large non-stick skillet over medium heat then add in the bread in batches and cook for about one to two minutes on one side then crake an egg into the middle of the bread toast and add salt and pepper for taste. Reduce the heat to low, partially cover the skillet and cook for about one to two minutes until the eggs become set. Serve alongside with the hot sauce and enjoy.
